Enzymes are powerful catalysts. They are proteins, which are completely degraded in nature. Enzyme reactions are performed in mild conditions close to physiological temperature and pH. Because enzymes are specific, the side reactions are not very common. Enzymatic processes have gained an established position within various industrial applications in the detergent, starch processing, dairy, textile and pulp and paper industries. [Pg.256]

Hence, enzyme activity is not always unwanted. On the contrary, many industrial applications of enzymatic catalysts are known, including food processing (e.g., brewing, dairy, and starch industry) and chemical and pharmaceutical industry [9, 16-20].
