Dairy bioactive peptides

Dairy proteins are rich in nutrients and occupy a unique place of importance in food and human nutrition because of their wide acceptance in the world. Milk proteins are important in the diet because of the many health benefits associated with their consumption. The proteins have long been recognized as natural sources of health enhancing bioactive peptides because of their stmctural and physicochemical components as recently reviewed by Livney (2010). [Pg.175]

Ingredia, a French dairy company, has developed Prodiet F 200 , a milk protein hydrolysate that contains a bioactive peptide with relaxing properties. The patented product has an anti-stress effect proven by several clinical studies and does not cause the classical side effects of anxiolytics. Food supplements, chocolate and animal feed are examples of its applications (Lefranc, 2002). [Pg.247]

Novel foods include those providing protein (soy and dairy), and those that are intended to improve cardiovascular health (stanol esters, P-glucan, bioactive peptides, and n-3 fatty acids), bone and joint health (calcium, glucosamine, and chondroitin), eye health (lutein), the immune system (milkmicronutrients, lactoferrin, lactoperoxidase, and colostrum), gut health (probiotics and prebiotics), body fitness (conjugated linoleic acid, amino acids, and glyco-macropeptide), energy level, and for beauty. [Pg.585]

Occurrence of Bioactive Peptides in Fermented Dairy Products.81... [Pg.52]

Bioactive peptides can be generated during milk fermentation by the proteolytic activity of starter cnltnres. As a result, peptides with various bioactivities can be found in the end-products, such as various cheeses and fermented milks. These traditional dairy products may under certain conditions have specific health effects when ingested as part of the daily diet. A list of bioactive peptides... [Pg.81]
