Crumb coatings

The first step in frosting is to create a crumb coat, a thin layer of frosting that traps the crumbs before the final coat of frosting is done. Because the cake is chilled, the ganache will harden quickly, so you ll need to be efficient. [Pg.33]

To finish frosting, place another, thicker layer of ganache on top of the crumb coat. If the ganache has hardened slightly, you can always place it on low heat, stirring frequently until it warms up a bit. [Pg.33]

The fines accumulate in the fryer pan during frying. These are primarily carbohydrate material (can be proteinaceous material from poultry, meat, or fish). The crumbs get charred during frying. Thus, accumulation of fines can darken the fryer oil. This leads to darker colored product with burnt taste. This is why it is necessary to remove the fines from the fryer either continuously or at a certain frequency. Nonblocking powdered thermoplastic rubber can be made through the use of a special solvent system. In this method, rubber crumb is dispersed in a high solubility parameter solvent which will barely dissolve the endblock domains and which will not dissolve the rubber phase at all. One such single solvent is acetone. Particle size of the crumb is controlled by the amount of shear used in dispersion. Addition of water totally precipitates the small particles. This powder may then be separated from the liquid and dried. The particles do not tend to agglomerate because the hard endblock phase preferentially coats the outside of each particle. [Pg.255]
