Since heterogeneity of stem bromelain was reported by Heinicke and Gortner [8], a number of studies have indicated that crude stem bromelain contains several proteolytically active components together with some nonproteolytic enzymes, inhibitors, and activators [9-31]. An extensive review of the purification procedures of different proteolytic components of crude stem bromelain up to 1976 is given by Cooreman et al. [7]. 

A detailed study concerning the occurrence of different proteolytic enzymes in crude stem and fruit bromelain was carried out by Ota et al. [15]. Fractionation of crude stem bromelain and characterization of the components revealed six proteolytically active components (SBB 1-5 and SBA) [15,16]. All active fractions were analyzed by SDS PAGE and migrated as a single band with molecular weights of 27,000 for SBB 1-3 and about 23,000 for SBB 4 and 5.
