In contrast, low-methoxy (LM) pectins gel in the presence of divalent cations, especially calcium, by the egg box mechanism proposed for alginates. Moreover, calcium pectinate gels prepared at neutral pH are heat stable, whereas acidic pH gels are thermo-reversible.
