Contents of free amino acids

It was a characteristic of small shrimp flavor that many varieties of cyclic polysulfides were formed during cooking. Some distinction in the composition of these heterocyclic substances were also observed among the shrimp species or from the treatment before heating, and led to the following conclusion the content of free amino acids should give the initiative for the formation pathway of the heterocyclic substances in small shrimps. 

Finally, it is concluded that the hydration state of the skin surface is strongly depend on the content of free amino acids of SC in dry skin, but not on ceramides in lamellar lipids.

Furthermore, RCCM was used to clarification for beer by the ways of a column [52]. RCCM could hydrolyze sensitive protein and increase contents of free amino acid in the beer. Therefore, the beer treated by RCCM could stay oxidation and aging procedure due to some metal ions being absorbed by RCCM.
