Because it is deficient in lysine, linseed meal should be used in combination with a complementary protein source(s). As with other oilseeds containing oil that is subject to rancidity, the ground seed should be mixed into diets and used quickly after processing.

The following study illustrates the effect of using complementary proteins. Growing rats were fed diets containing various combinations of rice and bean protein (Figure 8.30). For example, one test diet consisted of 100% rice protein and no bean protein, whereas another diet contained 40% rice protein and 60% bean protein. The PER was determined for each combination. The results demonstrate that the most valuable sources of protein were those containing 50 to 80% rice protein, with the remainder consisting of bean protein.

Cell-cell interaction via cell surface proteins Another form of direct communication between cells occurs with the help of surface proteins. In this process a cell surface protein of one cell binds a specific complementary protein on another cell. As a consequence of the complex formation, an intracellular signal chain is activated which initiates specific biochemical reactions in the participating cells. 

People who do not eat meat must be careful to eat a diet that includes the essential amino acids. This can be accomplished by eating complementary proteins. For example, com has many essential amino acids but is low in tryptophan. Beans, however, have ample tryptophan cultures that use cornmeal often complement this food source with beans. Similarly, cultures in Asia often eat rice with soy sauce this combination provides complementary proteins in the diet.
