Clove powder

Chill Powder. Chili powder is a commercial blend of several spices, ie, chili peppers, oregano, cumin seed, onion and gadic powders, aUspice, perhaps cloves, and others. Chili powder is the basic flavor for many highly spiced dishes, among them chili con came, and is used in cocktail sauces and ground meats. [Pg.28]

Invented in 1527, laudanum, a designation for a number of products containing opium, iiquor, and a variety of other ingredients, was the most popuiar form of opium consumption in the West. Of all the laudanum products available, the most popular was a brand called Sydenham s Laudanum, which contained one pound of sherry wine, two ounces of opium, one ounce of saffron, one ounce of powder of cinnamon, and one ounce of powder of cloves. Its popularity stemmed from the sweetness of the sherry undercutting the natural bitterness of opium. Dried, powdered garlic products should be standardized to contain 1.3% alliin (the allicin precursor) or have an allicin -generating potential of 0.6%. Enteric-coated formulations are recommended to minimize degradation of the active substances. A daily dose of 600-900 mg/d of powdered garlic is most common. Cloves are best used whole. The flavour deteriorates quickly once it is powdered. Whole and ground cloves are used to enhance the flavour of meat and rice dishes. They are used widely in curry powders and masalas. In North Indian cuisine, cloves are used in almost every sauce or side dish made, mostly mixed with other spices. In South India, they find extensive use in biriyanis to enhance the flavour of the rice. They are highly valued in medicine as a carminative and stimulant. Cloves are said to be a natural anthelmintic. [Pg.146]
