Chitosan is produced from the deacetylation of chitin. Chitosan is employed in the food industry. It is a hemostatic from which blood anticoagulants and antithrombogenic have been formed. Chitosan is a polymer produced from hydrolysis of natural chitin. Chitosan is not readily soluble in aqueous solutions, but can be solubilized and is thus considered with other water soluble polymers.
