In the canning and preserving industries, com symps are used to prevent crystallization of sucrose, provide body, accentuate tme fmit flavors, and improve color and texture. In the beverage industry, the predominant use is in the beer and malt-Hquor areas. High conversion symps are used to replace dry cereal adjuncts, provide fermentable sugars, enhance flavor, and provide body. These symps contain controlled amounts of dextrose and maltose for proper fermentation. [Pg.295]

A reversal of potential of the tin—iron couple occurs when tin-coated steel (tin-plate) is in contact with acid solutions in the absence of air. The tin coating acts as an anode it is the tin that is slowly attacked and not the steel. This unique property is the keystone of the canning industry because dissolved iron affects the flavor and appearance of the product. Thus, the presence of tin protects the appearance and flavor of the product. [Pg.57]

Packaging. The beer in pressure tanks is transferred to bottling, canning, and racking, or in some cases, to road tankers. During this filling operation it is important that the beer does not come into contact with oxygen, does not lose carbon dioxide, and is not contaminated by molds, yeasts, or bacteria. [Pg.26]

Food. Food-grade calcium chloride is used in cheese making to aid in rennet coagulation and to replace calcium lost in pasteurization. In the canning iadustry it is used to firm the skin of fmit such as tomatoes, cucumbers, and jalapenos. It acts as a control in many flocculation, coagulation systems (37). Hydrolysis of chlorophyll using sodium hydroxide produces the moderately water-soluble sodium salts of chlorophyllin, phytol and methanol (145). The magnesium ia chlorophyllin may be replaced by copper.
