Calcium chelating agents

Microtubules can be reconstituted in vitro at 37 °C from a solution that contains a physiological mixture of brain tubulin, MAPs, small amounts of guanosine 5 -triphosphate (GTP), magnesium ions, and the calcium-chelating agent EGTA [ethylene glycol-bis(2-aminoethyl ether) N, N -tetraacetic acid]. Tubulin assembly is inhibited by low temperature and by the presence of calcium ions.

Avoidance of interference of other milk constituents with measurements is also of importance for example, dissociation of casein micelles by calcium-chelating agents, such as trisodium citrate or ethylenediamine tetra-acetic acid (EDTA), may used to avoid interference of the micelles in particle size measurement, while clusters of fat globules can be disrupted by adding a low level of sodium dodecyl sulphate (SDS).

Most pectins are quite easy to extract. Some are soluble in cold water, others in hot water and yet others in hot solutions of calcium-chelating agents. From most sources relatively little pectin is totally resistant to being made soluble under mild conditions. Conventionally, terms such as cold water soluble , hot water soluble and residual pectins are applied to these fractions, but they contain overlapping populations of polysaccharides.
