Concentrating phosphoric acid leads to polyphosphoric acid, a mixture of several polymeric species, a good catalyst and dehydrating agent. Polyphosphate salts are used as water softeners in detergents or as buffers in food. Small quantities of elemental phosphorus are used to make matches, and phosphorus halides to prepare specialty chemicals for the pharmaceutical and agrochemical industries. 

Buffering and sequestering agents used in different food products include organic acids, such as acetic acid, citric acid, carbonates, fumaric acid, malic acid, and phosphoric acids. These agents have not imparted any adverse effects in food products.

Phosphoric acid is widely used as an acidifying and buffering agent in a variety of pharmaceutical formulations. It is also widely used in food preparations as an acidulant, flavor, and synergistic antioxidant (0.001-0.005%) and sequestrant. 

Use Ceramics, calcium acid phosphate, phosphorus and phosphoric acid, polishing powder, cattle foods, clarifying sugar syrups, medicine, mordant (dyeing textiles with Turkey red), fertilizers, dentifrices, stabilizer for plastics, in meat tenderizers, in foods as anticaking agent, buffer, nutrient supplement, removal of Sr from milk. 

Phosphates are minor buffering agents in blood but major ones within the cells. The important role of the polyphosphates and their sugar derivatives, especially with adenosine, is described later in this chapter. Their acidities are related to phosphoric acids.
