More recently, and in a spectacular manner, the tools of molecular biology have made the identification even more precise at the genus and species level and even within the same species. For a long time, lactic acid bacteria of wine were identified by their phenotypes. Now, with DNA analysis, more reliable results are obtained (Sections 4.3.3-4.3.6).
