The basic substance is acetophenone, also known as phenyl methyl ketone (8-53), which occurs in a small amount in some essential oils. A component of fennel (see Table 8.32) and star anise essential oils is anise ketone, also known as 4-methoxyphenylacetone (8-53). l-(4-Hydroxyphenyl)butan-3-one, called raspberry ketone (8-53), is a natural component of raspberry aroma. 

The following bodies have been detected in star aniseed oil Dextro-o-pinene, phellandrene (in several" modifications), cymene, cineol, di-pentene, Z-limonene, a-terpineol, methyl-chavicol, hydrokinone ethyl ether, safrol, a sesquiterpene, anise ketone CgH (OCH3)(CH3. CO. CHj), and anethol. 

True aniseed oil has not been so fully investigated, and the only bodies so far detected in this oil are anethol, methyl-chavicol, anise ketone, and traces of acetic aldehyde.

Anise oil contains (rani-anethole (75-90%), estragole (methylchavicol) (1%), anise ketone ( -methoxyphenylacetone), and P-caryophyllene. Other compounds in minor concentrations include anisaldehyde, anisic acid (oxidation products of anethole), linalool, limonene, a-pinene, acetaldehyde, /)-cresol, creosol, hydroquinine, P-famesene, y-hima-chalene, neophytadiene, and ar-curcumene (karrer). ° ... 

Pyruvic Acid Compounds.—Lubrzynska and Smedley have recently shown that a number of aldehydes such as heliotropin, anisic aldehyde, benzaldehyde, and cinnamic aldehyde, condense with pyruvic acid in slightly alkaline solution, with the formation of )8-unsaturated-a-ketonic acids. For example, if heliotropin and pyruvic acid in alkaline solution be left standing for about eight days at ordinary temperature, dihydroxy-methylene-benzal-pyruvic acid is formed. This body forms yellow needles, melting at 163° Similarly, anisic aldehyde yields methoxy-benzal-pyruvic acid, melting at 130° and cinnamic aldehyde yields cinnamal-pyruvic acid, melting at 73°. 

Typical examples are listed in Table 2.1. A few oxidations are effected by RuO but in general it is too powerful an oxidant for this purpose. The system RuCyaq. NaCl-CCy Pt anode oxidised benzyl alcohol to benzaldehyde and benzoic acid and p-anisaldehyde to p-anisic acid [24], and a wide range of primary alcohols and aldehydes were converted to carboxylic acids, secondary alcohols to ketones, l, -diols to lactones and keto acids from RuOj/aq. NaCl pH 4/Na(H3PO )/Pt electrodes (Tables 2.1-2.4). The system [RuO ] "/aq. K3(S303)/Adogen /CH3Cl3 oxidised benzyhc alcohols to aldehydes [30].
