[40] investigated alginate nanoparticles containing a model protein, bovine serum albumin (BSA), by the ionotropic gelation technique. The average particle size of the BSA-loaded alginate nanoparticles was 50nm, the zeta potential was -24 mV, and the polydispersity index was 0.36. 

Nowadays the challenging job for pharmaceutical scientists is to increase the oral bioavailability of insulin for diabetic patients. Li et al. [42] developed an alginate/ chitosancoated nanoemulsion (w/o/w) containing insulin as the model protein. The coated nanoanulsion particle size was 488 nm, the polydispersion index was 0.396, and the entrapment efficiency of insulin was 47.3%. The surface morphology of the coated and uncoated nanoemulsion was done by TEM. The in vitro result stated that the nanoemulsion was stable at gastric pH. Hypoglycemic effect and relative bioavailability were performed in a rat model. 

For polysaccharides with an accessible u.v. chromophore, circular dichroism (c.d.) provides a sensitive index of structure, conformation, and interactions. This is illustrated by the very different c.d. spectra shown (28,29) by the three block types present in alginate, and, as shown below, by the large spectral changes on chelation of calcium ions on specific binding sites around the carboxy chromophore (l4,15) ...
