Tristearin

Tristearin, a trioctadecanoyl ester of glycerol found in many animal and vegetable fats... [Pg.846]

Figure 26.2 shows the structures of two typical triacylglycerols, 2-oleyl-l,3-distearylglycerol (Figure 26.2a) and tristearin (Figure 26.2b). Both occur naturally—in cocoa butter, for example. All three acyl groups in tristearin are stearyl (octadecanoyl) groups. In 2-oleyl-l,3-distearylglycerol, two of the acyl groups are stearyl, but the one... Natural fats are glycerol esters of fatty acids known as triglycerides. Unsaturated fats are generally liquids (oils) at room temperature, while triglycerides rich in saturated fatty acids are generally solids. View tristearin and triolein. Which one of these is saturated and which is unsaturated Are die double bonds in the unsaturated fat cis or transl... [Pg.157]

Tristearin is the primary fat in beef. It is a triglyceride, a molecule of glycerin that has reacted with three molecules of the fatty acid stearic acid. [Pg.92]

Tristearin is a saturated fat. This means that every carbon has as many hydrogen atoms as it can hold—it is saturated with hydrogen— and there are no double bonds between any two carbons. Carbon can form four bonds. If a carbon is attached to two other carbons in a chain, the atom has two bonds left that can attach to hydrogens. [Pg.92]

Saturated fats like the tristearin in beef fat have higher melting points than the unsaturated fats in vegetable oils like trilin-olein or trilinolenin. [Pg.92]

TABLE 18 Data on the Interface Energetics of Sodium Alkanesulfonates on Tristearin (tristearin/5 x 103 mol 1 alkanesulfonate in distilled water at 50°C)... [Pg.183]

Using the Molecules Database on the Web site for this book, examine the structure of tristearin, formed by ilk the condensation of three molecules of stearic acid,... [Pg.331]

C 7H3sCOOH, with glycerol, C HjfOH. (a) Draw the Lewis structure of tristearin, (b) What types of forces are responsible for the molecule adopting the shape shown (c) Do you expect this molecule to be soluble or insoluble in water ... [Pg.331]

Many esters have fragrant odors and contribute to the flavors of fruits. For example, benzyl acetate, CH3COOCH2C6Hs, is an active component of oil of jasmine. Other naturally occurring esters include fats and oils. For example, the animal fat tristearin (12), which is a component of beef fat, is an ester formed from glycerol and stearic acid. [Pg.878]

Trimyristin (MW 722, C46He606) Tripalmitin (MW 806, C51H9e06) Tristearin (MW 890, C67H110O6)... [Pg.108]

Sucrose, Ci2H22On contains 10 C-C bonds, 14 C-O bonds, 14 C-H bonds and 8 O-H bonds Tristearin, C57Hno06 contains 53 C-C bonds, 6 C-O bonds, 3 C=0 bonds and 110 C-H bonds... [Pg.242]

Sucrose has the greater energy density, meaning that for 1 g of compound, more energy is released when sucrose is oxidized than when tristearin is oxidized. [Pg.242]
