Thermoplastic extrusion technology has been used to texturize many defatted vegetable protein ingredients, and produce many fibrous structures and meat-like textures. Such processes have been used extensively to prepare meat analogs (1, which have found their widest application in formulation of foods for institutional markets (3). A bioadhesive hot-melt extruded film for intraoral drug delivery and the processing thereof has been patented.f Applications of these films may be utilized in transmucosal drug delivery or even transder-mal systems. Starch can be destructurized using extrusion technologies in specific conditions. Sufficient work, heat and time have to be applied to a cereal-based starch product in the presence of plasticizers to destructurize it. The best plasticizer for starch is water in quantities lower than 45%. Other plasticizers are glycols such as glycerol and sorbitol.
