The remaining wood components make up the fraction that can be extracted with different solvents, mainly comprising volatile and non-volatile acids, sugars, steroids, hydrolysable tannins (ellagitannins), volatile phenols, terpenes, lactones, etc. This review will deal with the volatile components that can leach out into the wine during barrel aging and as a result may affect the sensory attributes of wine. [Pg.297]

The most widely used method is based on the reaction between potassium iodate and hydrolyzable tannins (Hartzfeld and others 2002). This method provides a good estimate for gallotannins but underestimates the content of ellagitannins. [Pg.65]

Complex tannins are defined as tannins in which a catechin unit (1.39) is bound glycosidically to either a gallotannin or an ellagitannin unit. As the name implies, the structure of these compounds can be very complex. An example is Acutissimin A (1.99). This is a flavogallonyl unit bound glucosidically to Cl, with an additional three hydrolyzable ester bonds to a D-glucose-derived open-chain polyol. [Pg.29]

This complex tannin is formed during the aging process of red wine, whereby the catechin unit originates from the grapes, and the ellagitannin, in this case vescalagin, originates from the oak barrels. [Pg.29]

In the same manner, not all ellagitannins are hydrolyzable as those with a C-glycosidic bond will not break down with tannin-active enzymes or hot dilute acids to produce free ellagic acid. [Pg.185]
