Tablets honey

Both elder flowers and elderberries can be used as teas, tinctures, syrups and tablets for children for colds, sniffles and fever. The syrup is especially effective to lessen the severity of an oncoming flu. It is pleasant -tasting and most children like it. Avoid giving anything with honey to children under one year of age. 

Bring 1 gallon of water to boil. Turn off heat and add yeast nutrient, tannin, acid blend, and all of the honey. Steep for 15 minutes. Temperature should be equal to or greater than 190°. Add the Campden tablets and let sit for 18 hours, then transfer to a primary fermenter, and pitch yeast Rack to a secondary fermenter after 11 days. Rack to keg after 30 days. Place keg in refrigerator under 15 psi of carbon dioxide are present and let condition there for 14 days.

Finally Matei et al. (2004) arbitrarily extended a titrimetric method (Skoog et al. 1998) for determination of the analyte in vitamin C tablets. The very high amounts of ascorbic add reported are probably distorted due to the interferences of easily oxidizable species found naturally in honey.
