Poly(vinyl acetate) is too soft and shows excessive cold flow for use in moulded plastics. This is no doubt associated with the fact that the glass transition temperature of 28°C is little above the usual ambient temperatures and in fact in many places at various times the glass temperature may be the lower. It has a density of 1.19 g/cm and a refractive index of 1.47. Commercial polymers are atactic and, since they do not crystallise, transparent (if free from emulsifier). They are successfully used in emulsion paints, as adhesives for textiles, paper and wood, as a sizing material and as a permanent starch . The molecular uniformity of constituting components of a nb/lcb glucan fraction of potato starch was investigated with Sepharose CL 2B (Fig. 16.16) as well as with Sephacryl S-1000 (Fig. 16.17). Therefore, each of the subsequently eluted 3-ml fractions was analyzed on their potential to form inclusion complexes with iodine, a sensitive test for the presence of nb/lcb glucans. Results are shown in Fig. 16.17 in terms of branching index, the ratio of extinction of pure iodine solution and of nb/lcb glucan/iodine complex the higher the index, the more pronounced the nb/lcb characteristics. [Pg.480]

Allen et al. (2007) produced puffed snack foods with com starch and pregelatinized waxy starch, WPC and instantized WPC, and protein concentrations of 16%, 32%, and 40% and showed that the air cell size, extru-date expansion ratio, and water solubility index decreased proportionally as protein and com starch levels increased. Protein concentration significantly affected total soluble protein, water absorption index, and water-soluble carbohydrate. A covalent complex between amylase and protein formed in the presence of cornstarch, but protein-protein interactions appeared with the presence of low levels of pregelatinized waxy starch. [Pg.193]

In the case of complex carbohydrates the glycemic index is a measure of how quickly the carbohydrate is broken down. An example is to compare potato starch and polydextrose. Both are polymers of dextrose but potato starch in the form of mashed potato is rapidly broken down and causes a surge in blood sugar, i.e. it has a high glycemic index. In contrast, polydextrose, which has the dextrose units linked 1 - 6, a link that is rare in nature, is only 25% metabolised and has a very low glycemic index. [Pg.44]

Solutions of isolated dioxiranes, characteristically dimethyldioxirane (DMD) in acetone, possess a pale yellow color, which serves as a convenient analytical index for monitoring the dioxirane consumption in oxidation reactions and kinetic studies. For DMD, the absorption maximum (n-jt transition ) centers at ca 325 nm, with a molar extinction coefficient (e) of 12.5 0.5 M cm in acetone.
