Obtaining Different Properties in the Starch. One method of obtaining a starch with different properties is the biological method of using a different type of plant. The best example of this is waxy maize, which yields a starch that is nearly pure amylopectin. The other method is to chemically modify the starch. Chemically modified starch is normally declared as modified starch . A whole range of modified starches are available. There is of course no bar to chemically modifying a starch from a special source.

These cocoa substitutes are of two kinds. First, they consist of otherwise unprocessed bulking agents with added flavor and color. The bulking agents employed are soybean flour, modified food starches, dextrins, or mixtures thereof. They are definitely offered as extenders none of the manufacturers recommend that they be used as a total replacement for cocoa. Manufacturers include Cargill, Inc., Minneapolis, Minnesota (Cocoa-Max), McCormick Company, Inc., Hunt Valley, Maryland, (McCormick Cocoa Extenders), and National Starch Chemical Corp., Bridgewater, New Jersey (N-Liven Cocoa). A.E. Staley Mfg. Co., Decatur, Illinois, entered the field but quickly dropped out. 

As a result, many chemical companies embarked on major corporate transformations, shifting away from commodities and into specialties. ICI is a classic example. During the 1990s, it sold most of its commodity businesses and made large purchases of specialty-focused companies, including National Starch Chemical and Quest. 

A film from Permasorb 10 (National Starch Chemical Corp.) was prepared by dispersing 0.50 g of polymer in 200 ml of water and drying the dispersion on a Teflon-coated tray.

The extrusion of starch with relatively low water contents (15 - 25% w/w) was extensively studied by the food industry [43]. One of the first commercial products of starch that achieved very good results was the expanded starch used for protection and as a shock absorber in packages, as a replacement for expanded polystyrene. These materials were patented by the National Starch Chemical Investment Corporation [44].

The starch material used was HYLON VII (70 % amylose, National Starch Chemical GmbH, Neustadt, Germany) after drying at I00°C for 24 h under vacuum. The solvents were dried and distilled prior to use according to conventional methods. Anhydrous LiCl was used after drying at 130°C for 2 h under vacuum. Other reagent grade chemicals were used without further purification.
