However, GrootWassink and Fleming64 reported a higher rate of hydrolysis of stachyose than raffinose for a commercial preparation of /3-D-fructofuranosidase of Saccharomyces cerevisiae. 

In his preparation of manninotriose from crystalline stachyose, Onuki followed the procedure worked out by Tanret, and obtained a product with somewhat higher optical rotation [a]26n + 174.57° (c 0.5, in water). 

On realizing the similarity of his manneotetrose to stachyose, Tanret undertook15 the preparation of stachyose from Stachys tuberifera, in order to compare the properties of the two materials. 

The rather detailed accounts of the earlier preparations of stachyose have been presented, in the first place, because the reader may wish to prepare some stachyose for himself at some time and he will want to know what methods are available, and in the second place, that the reader will better understand why stachyose has been (and for that matter, still is) a rare sugar, notwithstanding the abundance in which it occurs in Nature.

A patent owned by E.I. du Pont (Crank and Kerr, 1999) described procedures for preparing isoflavone-rich soy protein products with desirable flavor and functionality. A low-stachyose soybean variety was dehulled, flaked (0.25-0.6 mm), defatted by hexane and desolventized by vacuum to yield a 90 PDI (protein dispersibility index) of soymeal. A water extraction at 80°C was carried out for 6-10 min, and it was then cooled to 40-45°C by adding more water. The extract after centrifugation was neutralized and spray-dried. The product contained 2.5 mg/g isoflavone.
