Pullulan is a polysaccharide obtained from the fermentation of starch by the yeast Aurobasidiutn pullulans. It is edible and tasteless. It is used as edible films for food packaging with high oxygen permeability, oral care products, adhesives, thickeners, stabilizers, etc.. [Pg.16]
