Sorting harvest

Grape juice was obtained from a 1 1 mixture of two red cultivars, Benfica and Piriquita . After harvest the grapes were washed, sorted out, crushed, treated with SO2. pressed and kept at 7°C for three days. The juice was filtered and stored at -3 to 0 °C using 0.06% potassium sorbate as preservative. The soluble solids content was 22 °Brix, the pH 3.3, calcium, potassium and magnesium contents were 125, 1170 and 240 mg dm, respectively. [Pg.932]

The seedpods are harvested by hand in dry weather during the autumn, just before they start to open. Then they are dried whole in the sun. The main harvest is in October and November of the third year after planting, after which the seeds are sorted according to size, form, colour, etc. [Pg.43]

Of course, not all bad food is a different colonr from good food. It has been found that certain non-visible defects (bacteria for example) fluoresce when irradiated with ultraviolet light (350 mn), and this property may be used as a basis for sorting. This technique was originally developed for removing stinkers from green Arabica coffee beans, but has found applications in sorting peanuts, almonds and cranberries.
