There has been a great deal of interest in the possible commercialization of the Zymomonas mohi/is-catalyzed process for oxidation of glucose to gluconic acid combined with the reduction of fructose to sorbitol. Sorbitol as well as sodium gluconate is used in a variety of industrial applications.
