Saccharose fatty acid ester

Mean particle size ranges 50 to 1000 mn. Depending on the type and concentration of the lipid, 0.5 to 5% emulsifier (surfactant) has to be added for physical stabilization. For dermal use, surfactants are very often poloxamer 188, polysorbate 80, lecithin, tyloxapol, polyglycerol methylglucose distearate (Tegocare 450), sodinm cocoamphoacetate (Miranol Ultra C32), or saccharose fatty acid ester. [Pg.3]

Sugar esters or sugar alcohol esters with long chain fatty acids (lauric, palmitic, stearic and oleic) are produced industrially and are very important as surface-active agents. These include sorbitan fatty acid esters (cf. 8.15.3.3) and those of saccharose (cf. 8.15.3.2), which have diversified uses in food processing. [Pg.291]

This group includes industrially produced substances. Esters of sorbitol or saccharose with one or two molecules of fatty acids are used as emulsifiers of fats. Sucrose esters with 5-8 molecules of fatty acids are used as fat substitutes (called Olestra), with the advantage that they have physical properties similar to fat and give the same sensory impression, but they are unusable in the human body and therefore do not supply the body with energy. These substances are described in more detail in the section dealing with food additives (see Section 11.5.2.1.5). [Pg.134]
