As with most vegetable oils the saturated acids hardly occur at the 2-position of the triglyceride. The glyceride composition calculated by the 1,3-random, 2-random distribution agrees well with experimentally determined values. Typical figures are given in Table 3.142. The stereospecific distribution of fatty acids in soya do not show strong differences in the composition of the 1- and 3-positions (Table 3.144). 

The uniqueness of milk fat is not limited to its fatty acid profile. If the 400 fatty acids of milk fat were distributed randomly in the milk fat TAGs, the total theoretical number of glycerides would be 64 x 106 (Jensen, 2002) ... 

This procedure can also be applied to mixtures of oils and fats. All the acids in the two (or more) oils will then be distributed at random, and this provides a method of transferring saturated fatty acids to predominantly unsaturated glycerides and vice versa (Section 5.5.2).
