6 Potential techniques for the production of animal-derived ingredients 

Many production methods are available to the food industry, that might be utilised in the preparation of new, or improved, ingredients from animal sources. Some of these have already been utilised to prepare functional ingredients from meat raw materials, principally in the separation and concentration of blood products. Others have yet to be considered by the meat industry as possible production techniques. 

Some mention of the types of ingredients produced using some of these methods has been made in earlier sections. This section will describe briefly the principles as well as existing and future applications of some of the more promising techniques.
