Supra-nutritional supplementation of meat-producing animals with vitamin E has been shown to improve meat product shelf-life. Tocopherol is a fat-soluble vitamin and the question of potential toxicity must be considered. Bendich and Machlin (1988) have reviewed studies associated with megasupplementation of vitamin E and concluded that toxicity of this nutrient is low. High intakes of vitamin E do not appear to be mutagenic, carcinogenic or teratogenic. However, the authors noted that vitamin E supplementation can exacerbate a pre-existing vitamin K deficiency.
