The manufacture of potato starch is a simple and easy process based on thorough comminution of potato tubers, separation of starch from potato pulp, its purification and dehydration. All the processing steps before drying have been described in detail by Lisinska and Leszczynski [9] and Treadway [10]. [Pg.653]
