Pigman,22 in an investigation of the inulin-hydrolyzing enzymes in commercial enzyme preparations, has noted the same pH for optimum activity. He concludes that the inulases and invertases are different enzymes or that they represent a class of enzymes in which the individual members vary according to source.

The editors of Volume V wish to express their appreciation of the excellent service that has been rendered by Professor W. W. Pigman and Professor M. L. Wolfrom in the editing of the earlier volumes of this series. They have generously consented to assist in the publication of later volumes in the capacity of members of a Board of Advisors, which now takes the place of the Executive Committee of the earlier volumes. 

The enzymatic synthesis of sucrose also throws light on the formation of the furanose form of fructose in the sucrose molecule. The fact that sucrose is directly formed from D-glucose-l-phosphate and D-fructose supports Isbell and Pigman s34 and Gottschalk s85 evidence that the latter monosaccharide occurs in solution in an equilibrium mixture of furanose and pyranose forms. This makes it unnecessary to postulate a special mechanism of stabilization of a five membered (furanose) ring before the formation of compound sugars containing the D-fructose molecule.86...
