The method involves the enzymatic conversion of aspartame to hydrogen peroxide by the chymotrypsin-alcohol oxidase system, followed by the use of 2,2-azinobis(3-ethylbenzthiazoline-6-sulfonic acid) (ARTS) as electron donor for peroxidase.
