Bakers often use additives to change the dough in certain ways and give themselves more control over the baking process. [Pg.155]

As apparatus for the batch process, an enamel or steel reactor with an agitator and pressure steam or oil heating suffices. Apparatuses used in the continuous synthesis in the presence of solvents and in the bake process are described in [50] and [51,52], respectively. L-Ascorbic acid is now produced in thousands of tonnes every year. It is used very extensively in the food industry and has its own E number (E300). Many foods have it added simply as a vitamin supplement, e.g. in fruit juices. In bread making it forms part of the baking process and is used as an antioxidant in a wide variety of foods. It is sold as an over-the-counter medicine in the form of pills and as a component of various multivitamin tablets indeed in shops in California it may be bought in 1 kg containers in powder form. A number of dielectric films are deposited by the spin-on technique. In this case the film s constituent molecules are dissolved in a solvent to form a hquid. After spinning the Hquid over a semiconductor surface the solvent is driven off with a baking step, leaving behind the thin dielectric film. Common films include polyimide and benzocyclobutene (BCB). Carbon dioxide-silica process. Sand is mixed with sodium silicate (3.0 to 3.5% of sand volume), and the mixture is blown or hand-rammed into a core box or around a pattern. Carbon dioxide gas is passed through the compacted sand to harden the binder. The bonding strength eliminates the need for drying or baking the mold and metal can be poured into the mold immediately. Baking is currently performed by continuous operation. Modern variations involve using heated crushing or milling equipment, such as kneader dispersers or oscillating mills at approximately 200°C [9]. This technique significantly improves the reaction control over a batch process. If baking is performed by continuous process, phthalonitrile only remains within the reaction vessel for a very short period of time (between 3 and 20 minutes). It is important to remember that the temperature may not exceed 250°C. The product which evolves from this process is usually purified by acid treatment. [Pg.426]
