In our previous work we have developed the tool OpenSESAME (Simple but Extensive, Structured Availability Modeling Environment (Walter Schneeweiss 2005 Walter et al. 2008 Walter 2000)). Sesame oil (also known as gingelly oil or til oil) is an organic oil of the plant Sesamum indicum grown mainly in India and China but also in Myanmar (Burma), Sudan, and Mexico. The sesame seeds are protected by a capsule, which does not burst open until the seeds are completely ripe. The ripening time tends to vary. For this reason, the farmers cut the plants by hand and place them together in an upright position to carry ont ripening for a few days.
