The Codex Alimentarius Commission, in its Draft Provisional Standard34 (following definition and description, and subsidiary definitions and designations) has laid down certain compositional criteria. It is obvious that all definitions of honey so far discussed deal with two chemically and physically distinct commodities namely, nectar honey and honeydew honey. A comparison between the two shows that honeydew honey is lower in D-fructose and D-glucose and higher in pH, oligosaccharides, acidic components, ash, and nitrogen than nectar honey. 

The particular value of acid hydrolysis is that, used in conjunction with paper chromatography, much evidence may be obtained from very small amounts of compound. As the identification of monosaccharides by paper chromatography is well established, the use of this technique in conjunction with total, acid hydrolysis provides a ready means for identifying, both qualitatively and quantitatively, the monosaccharide components of an oligosaccharide. Acid stability of different glycosidic links differs, and total hydrolysis may require from one to four hours at 100° in N acid even more vigorous conditions may be required when amino sugar or uronic acid residues are present. A derivatization with acid chlorides is also possible. Amino acids can be derivatized with 9-fluorenylmethyl chloroformate (FMOC) and separated on a CSP with X-cyclodextrin (ChiraDex gamma ), a cyclic oligosaccharide which consists of eight glucose units.
