Phosphorus compounds are very important as fertilizers (world use 1976/77 27-3 megatonnes as P2O5) but are widely used in matches, pesticides, special glasses and china ware, alloys (sleels. phosphor bronze), and metal treating (10%), detergents (40%), electrical components (e.g. GaP), foods and drinks (15%). Because the scent of a flower may be due to hundreds of different compounds, it is difficult for perfume manufacturers to duplicate floral scents. Establishing the identities and relative amounts of the components of a fragrance was actually impossible until the development of chromatography. Related techniques are used in forensic laboratories to match samples of fluids, by food manufacturers to test product quality, and to search for evidence of life on other planets. Acerola is considered one of the best natural sources of AA and for this reason, the influence of this component on the stability of anthocyanins from acerola extracts was determined and compared to results from agai, which contain no detectable AA. The stability of acerola was hampered by the high concentration of AA in the fruit. Moreover, the addition of AA to the agai solution in concentrations equivalent to the concentration in the acerola caused a dramatic decrease of the stability of agai.
