Leavening agents, potassium bicarbonate

Leavening Agents. Sodium bicarbonate, NaHCOj. is the most Commonly used product, but ammonium bicarbonate. NH4HCO, and potassium bicarbonate. KJTCOt. are used as well. When used alone, sodium bicarbonate reacts to give products a biller, soapy flavor. Thus it is always combined with a leavening acid. [Pg.671]
