Regeneration of protein is used in food industry to make meat like products from plant proteins. [Pg.41]

Ultrafiltration (UF) is an important component in wastewater treatment and in food industry [109,110]. With increasing concerns and regulations in environment as well as in food safety, the process of ultrafiltration has become more critical, whereby new technology development to provide faster and more efficient water treatment is not only necessary but also urgent. Currently, conventional polymeric UF membranes are prepared mainly by the phase immersion process, typically generating an asymmetric porous structure with two major limitations (1) relatively low porosity and (2) fairly broad pore-size distribution [111,112],... [Pg.147]

A peptide is essentially comprised of L-amino acid residues, and the peptide backbone may be critical to provide physicochemical and functional properties. Diverse functionalities induced by peptides in natural protein hydrolysates are being received with much interest in food industries or alternative-medicinal food sciences. The seeds of Tamarindus indica contain polysaccharides which can be extracted with hot water and purified by precipitation with alcohol. The polysaccharide is composed of D-galactose, D-xylose, and D-glucose (Fig. 10). These xyioglucans have been named amyloids since they give a color reaction with iodine similar to starch. The xyioglucans from Tamarindus are gel-forming polysaccharides which are stable in a wide pH range. This type of polysaccharide is mainly used in food industry, but, in some cases, it has been pharmaceutically employed as a substitute for pectin. [Pg.23]
