Guaran gum consists of a chain of P-D-mannopyranosyl units joined by 1 4 linkages. Every second residue has a side chain, a D-gal-actopyranosyl residue that is bound to the main chain by an a(l 6) linkage (cf. Formula 4.126). [Pg.311]

Guaran gum forms highly viscous solutions (Table 4.21), the viscosity of which is shear rate dependent (Fig. 4.23). [Pg.311]

The main locust bean polysaccharide is similar to that of guaran gum a linear chain of 1 4 linked P-D-maimopyranosyl units, with a-D-gal-actopyranosyl residues 1 6 joined as side chains. The ratio mannose/galactose is 3 to 6 this indicates that, instead of every second mannose residue, as in guaran gum, only every 4th to 5th is substituted at the C-6 position with a galactose molecule. [Pg.312]

Like guaran, and the endosperm polysaccharides of other legumes, locust bean (carob)gum [9000-40-2] is also a galactomaiman. Like guaran, it has a linear backbone of (1 — 4)-1inked P-D-mannopyranosyl units. However, in locust bean gum, approximately one of every 3.9 P-D-mannopyranosyl units, on the average, is substituted with an a-D-galactopyranosyl unit attached at 0-6. [Pg.488]

In no case is one of these galactomannans available and used as a pure polysaccharide. Rather they are the ground endosperm of the seeds of the plant from which they are obtained. As a result, the commercial gums also contain fiber, protein, ash, and other constituents. As already indicated, the polysaccharide present in guar gum is called guaran.
