In order to address the present imbalance between potential and realization of intelligent packaging concepts in comparison with active packaging, a number of research gaps need to be filled. A huge challenge in research area of the quality indicators is to find the indicators which are sensitive (ppm - ppb levels) and specific. Most of the current pH-based indicators lack these properties. To determine their accuracy and reliability, response function with time as rate constants is required to determine as exemplified in the study of Nopwinyuwong et al. (2010). [Pg.420]
