As for coriander, in the unripe fruits and the vegetative parts of the plant, aliphatic aldehydes predominate in the steam-volatile oil and are responsible for the peculiar aroma. On ripening, the fruits acquire a more pleasant and sweet odour and the major constituent of the volatile oil is the monoterpene alcohol, linalool. Sotolon (also known as sotolone, caramel furanone, sugar lactone and fenugreek lactone) is a lactone and an extremely powerful aroma compound and is the major aroma and flavour component of fenugreek seeds (Mazza et al., 2002). [Pg.8]

Some representatives of y-lactones are y-valerolactone 150, y-decalactone 151 with peach-like flavour, (Z)-6-dodecen-4-olide 152, 3-methyl-4-octanolide (whiskey lactone) 153 and 3-hydroxy-4,5-dimethyl-2(51T)-furanone (sotolone) 154 (Structure 4.46), found in fenugreek, coffee and sake [1-4, 21-23, 62]. [Pg.66]

Certain 2-hydroxy substituted y-lactones (3-hydroxy furan-2-ones) derived from ycrotonolactone, however, have a specific odour. Typically 3-hydroxy-4,5-dimethyl-5//-furan-2-one (sotolon) has an aroma resembling fenugreek or curry at higher concentrations, and caramel, maple syrup or burnt sugar at lower concentrations. Sotolon occurs as a mixture of -)- R)-and (-F)-(S)-enantiomers (8-111). The perception threshold of (S)-sotolon (0.8 (xg/1) in a model wine solution was 100 times lower than that of the (l )-enantiomer (89 p-g/l), indicating that mainly (S)-sotolon contributes to the characteristic aroma of wines.
