Fast food purchase

Packaging formats and materials will all play then part in appealing to die consumer. It is important to consider whether the product is to be in a multiserve or single-serve pack, purchased in a supermarket as part of a weekly shop or as an impulse purchase in a fast-food outlet, garage forecourt or corner 24-7 shop. This may affect the pack size, material format and hence the product processing conditions available to the drink development technologists. 

Most of this type of research has now been taken over by the fast food industry. There is a great additional need for fundamental studies in these areas to develop processes based on sound principles rather than the empirical measures necessary during World War II, and to produce stable foods for feeding the world s millions rather than just the affluent purchasers of fast foods. 

It should be noted that foods that are normally cooked, for example, fruits and vegetables, were cooked as they would be in a domestic kitchen prior to analysis. Fast foods were obtained ready-to-eat and analyzed as purchased. 

One waste edible oil (WDO-1) was collected from fast food restaurant, the other (WDO-2) was obtained from local restaurant waste oil pool and pretreated with activated clay. The refined com oil (RCO) was purchased from local supermarket. Novozym 435 (lipase B from Candida antarctica, 164 U/g, lunit corresponds to the amount of enzyme that produces 1 pmol methyl oleate from triolein per minute at 35 °C) was kindly donated by Novo Nordisk Co. (Denmark). Methyl palmitate, methyl stearate, methyl oleate, methyl linoleate, methyl linolenate and methyl heptadecanoate (as an internal standard) were purchased from Sigma (USA). All other chemicals were also obtained commercially and of analytical grade. 

SUMMARY. Convenience and fast foods are now used by a substantial number of Americans. These items may make significant nutritional contributions to the diet when the purchaser knows enough about their nutrient composition to make wise selections. Furthermore, many products are economical in terms of their overall cost, which includes the purchase price, and the costs of fuel for heating (or electricity for cold storage) and labor for preparing.
