Lobster European

The European lobster Homarus vulgaris) is a closely related species, occurring in temperate waters of western Europe. This species is considerably smaller than the American lobster. The Norwegian lobster or scampi (Nephrops norvegicus) is an even smaller lobster that ranges from the Norwegian coast to the Adriatic coast in the eastern Mediterranean Sea. [Pg.147]

Fig. 6.3 Decapod antennules and sensilla. (a) Antennule of the crab Carcinus maenas. The aesthetascs (arrow) form a dense array on the lateral filament. Scale bar 500 pm. (b) Part of antennule of the European lobster Homarus gammarus. Unimodal aesthetascs (ae) are surrounded by bimodal guard hairs (arrows) and companion hairs (arrowheads). Scale bar 500 pm. (c) The aesthetascs on the antennule of H. gammarus are arranged in two rows (black arrows) on each annulus. The sockets of the guard and companion hairs surround the aesthetascs (white arrows). Scale bar 200 pm. (d) Part of antennule of the crayfish Pacifastacus leniusculus. There is one distal group (dg) and one proximal group (pg) of aesthetascs on each annulus. Scale bar 100 pm... The red pigment of salmonid fish and many crustaceans (shrimps, crabs, crayfish and others) is xanthophyll astaxanthin, (3S,3S )-astaxanthin, which is (3S,3S )-P,P-carotene-3,3 -dihydroxy-4,4 -dione (9-192). Astaxanthin in crustaceans is bound to proteins in dark blue-red and green-red carotenoproteins. During cooking, proteins denature and the typical red colour of free astaxanthin becomes more vibrant For example, the light blue crab Homarus gammarus (Nephropidae), known as European lobster... [Pg.734]
