Volatile phenols originate from hydroxycinnamic acids (ferulic, p-coumaric, or caffeic acid) by the action of hydroxycinnamate decarboxylase enzyme, which turn the hydroxycinnamics acid into vinylphe-nols (Albagnac, 1975 Grando et al., 1993).
