Comparison of tocopherol contents of cold pressed and fermented coconut oils from different coconut cultivars indicate that the cold pressed method provides highest tocopherol content in coconut oil. The initially produced coconut oil is actually a white solid highly saturated fat with a characteristic odour. It is extracted by either cold pressing or solvent extraction of the coconut flesh. This fat has a melting point of 25 °C and is reasonably stable to oxidation when exposed to the air. Chemically it is very high in saturated fats, typically up to 85%. [Pg.217]
