Cherries brining

Fruit and Vegetable Products. Sorbates are appHed at 0.05—0.1 wt % as a fungistat for pmnes, pickles, reHshes, maraschino cherries, oHves, and figs (64,112). The same levels extend shelf life of prepared salads such as potato salad, cole slaw, and tuna salad (99). In fermented vegetables, sorbates protect the finished product by retarding yeasts during fermentation or in the cover brine (r65,r72—r74,r94). [Pg.287]

The Kind of Blue is rescued by its jazz-cool pale blue and the taste of maraschino, which is distilled like brandy from marasca cherries and their pits, which are crushed and included and which give the liqueur, and the cocktail, an artisanal bitter-almond taste. In the nineteenth century, maraschino is what cherries were marinated in to produce maraschino cherries, the drink garnish. Maraschino cherries are now brined chemically. [Pg.184]

PROCESSING. In the United States, 54% of the sweet cherries are sold fresh, 10% frozen, 7% canned, and 30% brined (maraschino or confectionery use). Of the sour cherries, 3% are sold fresh, 35% are canned, 59% are frozen, and 3% are brined. Cherries sold fresh include cherries sold for home use. [Pg.190]

CHERRIES. In laboratory tests, cherries in brine caused moderate attack of 3003, 5052, and Alclad 3(X)3 alloys at ambient temperature. Alclad 3(X)3 when exposed at ambient temperature was resistant to Maraschino cherries in another laboratory test. Fresh cherries in water have been carried by aluminum alloy irrigation pipe to processing tanks. [Pg.615]
