Chain length complexation reactions

Phosphates, which react with calcium to reduce the calcium ion activity, assist in stabilizing calcium-sensitive proteins, eg caseinate and soy proteinate, during processing. Phosphates also react with milk proteins. The extent of the reaction depends upon chain length. Casein precipitates upon addition of pyrophosphates, whereas whey proteins do not. Longer-chain polyphosphates cause the precipitation of both casein and whey proteins. These reactions are complex and not fully understood. Functions of phosphates in different types of dairy substitutes are summarized in Table 9 (see also Food additives). [Pg.443]

The generated polysulfide dianions of different chain-lengths then establish a complex equilibrium mixture with all members up to the octasulfide at least see Eqs. (5) and (6). For this reason, it is not possible to separate the polysulfide dianions by ion chromatography [6]. The maximum possible chain-length can be estimated from the preparation of salts with these anions in various solvents (see above). However, since the reactions at Eqs. (22) and (23) are reversible and Sg precipitates from such solutions if the pH is lowered below a value of 6, the nonasulfide ion must be present also to generate the Sg molecules by the reverse of the reaction at Eq. (22). The latter reaction (precipitation of Sg on acidification) may be used for the gravimetric determination of polysulfides [11]. There is no evidence for the presence of monoprotonated polysulfide ions HS - in aqueous solutions [67, 72]. [Pg.138]

Metal polysulfido complexes have attracted much interest not only from the viewpoint of fundamental chemistry but also because of their potential for applications. Various types of metal polysulfido complexes have been reported as shown in Fig. 1. The diversity of the structures results from the nature of sulfur atoms which can adopt a variety of coordination environments (mainly two- and three-coordination) and form catenated structures with various chain lengths. On the other hand, transition metal polysulfides have attracted interest as catalysts and intermediates in enzymatic processes and in catalytic reactions of industrial importance such as the desulfurization of oil and coal. In addition, there has been much interest in the use of metal polysulfido complexes as precursors for metal-sulfur clusters. The chemistry of metal polysulfido complexes has been studied extensively, and many reviews have been published [1-10]. [Pg.154]

Reactions of metal halides with polysulfide dianions are useful methods for the synthesis of polysulfido complexes of main group elements and transition metals. In most of these reactions, similarly to other methods, the chain lengths and coordination types of the polysulfide ligands depend on the other ligands coordinated to the metal, on the ratio between the metal and sulfur, on the reaction temperature, and other parameters. [Pg.166]

The chain length, i.e. number of RH —> RC1 conversions per Cl produced by photolysis, is wlO6 for CH4, and the reaction can be explosive in sunlight. Chlorination can also be initiated thermolytically, but considerably elevated temperatures are required to effect Cl2 — 2C1, and the rate of chlorination of C2H6 in the dark at 120° is virtually indetectable. It becomes extremely rapid on the introduction of traces of PbEt4, however, as this decomposes to yield ethyl radicals, Et, at this temperature, and these can act as initiators Et- + Cl—Cl —> Et—Cl + Cl. Chlorination of simple alkanes such as these is seldom useful for the preparation of mono-chloro derivatives, as this first product readily undergoes further attack by the highly reactive chlorine, and complex product mixtures are often obtained. [Pg.324]

The rate also decreases with an increase in the chain length of the alkene molecule (hex-l-ene > oct-1-ene > dodec-l-ene). Although the latter phenomenon is attributed mainly to diffusion constraints for longer molecules in the MFI pores, the former (enhanced reactivity of terminal alkenes) is interesting, especially because the reactivity in epoxidations by organometallic complexes in solution is usually determined by the electron density at the double bond, which increases with alkyl substitution. On this basis, hex-3-ene and hex-2-ene would be expected to be more reactive than the terminal alkene hex-l-ene. The reverse sequence shown in Table XIV is a consequence of the steric hindrance in the neighborhood of the double bond, which hinders adsorption on the electrophilic oxo-titanium species on the surface. This observation highlights the fact that in reactions catalyzed by solids, adsorption constraints are superimposed on the inherent reactivity features of the chemical reaction as well as the diffiisional constraints. [Pg.93]

Few studies have systematically examined how chemical characteristics of organic reductants influence rates of reductive dissolution. Oxidation of aliphatic alcohols and amines by iron, cobalt, and nickel oxide-coated electrodes was examined by Fleischman et al. (38). Experiments revealed that reductant molecules adsorb to the oxide surface, and that electron transfer within the surface complex is the rate-limiting step. It was also found that (i) amines are oxidized more quickly than corresponding alcohols, (ii) primary alcohols and amines are oxidized more quickly than secondary and tertiary analogs, and (iii) increased chain length and branching inhibit the reaction (38). The three different transition metal oxide surfaces exhibited different behavior as well. Rates of amine oxidation by the oxides considered decreased in the order Ni > Co >... [Pg.457]
