Carob bean galactomannans

The polysaccharidic galactomannans which occur94 in the endosperms of guar, locust bean, carob bean, and many other legumes have been... [Pg.182]

Carob bean gum, or locust bean gum, is another type of mainly neutral galactomannan, and is found in the seeds of the leguminous Ceratonia siliqua Linn. Interestingly, carob... [Pg.155]

Like guaran, and the endosperm polysaccharides of other legumes, locust bean (carob)gum [900040-2] is also a galactomannan. Like guaran, it has a linear backbone of (1 — 4)-linked p-D-mannopyranosyl units. However, in locust bean gum, approximately one of every 3.9 p-D-mannopyranosyl units, on the average, is substituted with an a-D-galactopyranosyl unit attached at 0-6. [Pg.488]

Locust bean or carob Thickener exhibits Galactomannan Endosperm of locust... [Pg.36]

The principal commercial source of galactomannans, at present, is locust bean seed. Carob trees (Ceratonia siliqua) are cultivated widely in southern Europe, on Mediterranean islands, and in northern Africa. [Pg.45]

Galactomannans are neutral polysaccharides isolated from seeds (carob, guar, locust bean, tara, etc.). Their main chain is made of [(1 4)- 3-D-Man] (Man = mannose M units) with different degrees of substitution on 0-6 with a-D-galactop5Tanosyl units (G). Their composition (or M/G ratio) is easily determined by H NMR. [Pg.511]
