Gum ghatti is the calcium and magnesium salt of a complex polysaccharide which contains L-arabinose, D-galactose, D-mannose, and D-xylose and D-glucuronic acid (48) and has a molecular weight of approximately 12,000. On dispersion in water, gum ghatti forms viscous solutions of viscosity intermediate between those of gum arabic and gum karaya. These dispersions have emulsification and adhesive properties equivalent to or superior to those described for gum arabic. 

It is interesting that, when 14 was treated with calcium hydroxide, D-arabtno-5-hexulosonic acid (125) was formed in good yield.580,581 By a similar procedure, D-glucuronic acid (54) was converted in 60-70% yield into D-/yxo-5-hexulosonic acid (126).582,583 Stereoselective reduction of 125 or 126, could, potentially, afford L-galactonic acid or L-gu-lonic acid, respectively, which could then be converted into 1. 

Calcium, barium and sodium 1,2-isopropylidene-D-glucuronates were prepared from authentic 1,2-isopropylidene-D-glucuronic acid. The crystalline calcium salt contained 5.5 molecules of water and had [a]n25 —1.54° (c, 1.97, water), while the barium salt was a monohydrate insoluble in water. The anhydrous sodium salt had [a]D25 —2.58° (c, 10.74, water). 

Xanthan Gum occurs as a cream colored powder. It is a high-molecular-weight polysaccharide gum produced by a pure-culture fermentation of a carbohydrate with Xanthomonas campestris, purified by recovery with isopropyl alcohol, dried, and milled. It contains D-glucose and D-mannose as the dominant hexose units, along with D-glucuronic acid and pyruvic acid, and it is prepared as the sodium, potassium, or calcium salt. It is readily soluble in hot or cold water, but it is insoluble in alcohol. Its solutions are neutral.

The USPNF 23 describes xanthan gum as a high molecular weight polysaccharide gum. It contains D-glucose and D-mannose as the dominant hexose units, along with D-glucuronic acid, and is prepared as the sodium, potassium, or calcium salt. 

Derivation A carbohydrate polymer, complex and highly branched. The central core or nucleus is d-galactose and D-glucuronic acid (actually the calcium, magnesium, and potassium salts), to which are attached sugars such as L-arabinose and L-rhamnose.
