The application of microemulsions in foods is limited by the types of surfactants used to facilitate microemulsion formation. Many surfactants are not permitted in foods or only at low levels. The solubilization of long-chain triglycerides (LCTs) such as edible oils is more difficult to achieve than the solubilization of short- or medium-chain triglycerides, a reason why few publications on microemulsions are available, especially because food-grade additives are not allowed to contain short-chain alcohols (C3-C5).

Butanol and methanol were used in most applications of microemulsions. Ishihama et al. investigated the effect of alcohol on the migration factor of the solute in different systems and on the migration of SDS micelles with or without alcohol. Sudan III migrated as tracer for micelles of SDS faster than dodecylbenzene in the SDS/butanol system (10-12). Due to the addition of butanol to the ME solution, the CMC values decrease very sharply.

Potential applications of microemulsions include separation processes, reaction processes, and chromatographic applications. Chemical processes, which would benefit from the solubilization of polar substances in a nonpolar SCF are interesting candidates for this area. 

The current or potential industrial applications of microemulsions indude metal working, catalysis, advanced ceramics processing, production of nanostructured materials (see Nanotechnology), dyeing, agrochemicals, cosmetics, foods, pharmaceuticals, and biotechnology (9,12—18). Environmental and human-safety aspects of surfactants have begun to receive considerable attention (19—21).
